One of the problems with providing choices to players is that it tends to be more work for you as a designer. If a player can choose to be good or evil, you need to make them feel like that their experience depends on that choice. One design trick is to provide illusionary choice:

Despite your best efforts, players will always find ways to make choices, or combinations of choices, that you did not anticipate. As much as possible, those choices need to be respected as well:
